Question by Chris M: What is the best way to get into the coffee industry?
I want to get into the coffee industry such as a roaster. Is the best bet to just get in with a company and hope to rise from within, or is there specific education that can help you land a job in the production side of coffee?

What experience and training do you have?

The coffee ‘industry’ goes from planting coffee trees in Brazil to sweeping up the local Starbucks at night. If you want to be a ‘roaster’ you need to contact the companies that do roasting in your area and talk to them.

I’m pretty sure that if you work for a mass production plant you’d start in the warehouse end of the business [loading and unloading trucks] or other manual labor position.

You could work in the quality control end of the business. In which case a college or technical school background would be needed.

Here are 3 simple tips that will make a difference in every single cup you drink.

Tip #1
Clean Coffee Pot

A clean pot is essential and can make a world of difference in the taste of your coffee. Old oils from previous batches of coffee and soap residue left on the pot makes coffee taste bad.

Baking soda and water work well for cleaning coffee mugs and pots. Be sure to rinse extra good so no residue is left behind.

Tip #2
Clean Filtered Water

The water you use for your coffee will affect the taste more than anything. Coffee is 99% water so use clean filtered or bottled water free from chlorine and other minerals that will affect the taste of your coffee.

Using stainless steel or gold mesh filters instead of paper filters will also make your coffee taste better. Paper filters release dyes, chlorine and bleach that affect taste. If you insist on using paper filters buy the unbleached, brown paper filters.

Tip #3
Use Fresh Quality Coffee

Quality coffee costs more but will consistently produce better tasting coffee.

For the best results use quality, whole bean coffee and grind the coffee beans just prior to use. You might think it’s an inconvenience compared to ground coffee, but once you taste the difference you’ll never go back.

If you still want to use ground coffee, make sure you use a good, drip grind coffee.

Use 2 level tablespoons of coffee per 6 ounces of water. This can be adjusted for individual taste preference. Make sure to spread the grounds evenly in the coffee filter so full brewing is achieved.

Drink your fresh coffee right away for the best flavor. Coffee will break down quickly if left on a heat source. Coffee should never be reheated or microwaved.

A clean, preheated air pot or stainless steel Thermos will keep coffee hot for about an hour without hurting the flavor.

If you follow these 3 simple tips, every cup you brew will be perfect coffee.

Kahlua 100% Arabica Gourmet Coffee?

So, I bought Kahlua 100% Arabic Gourmet Coffee (not the alcoholic liqueur) and so far every time I brew some and add sugar and vanilla creamer (or milk) it just doesn’t taste good.

Has anyone made a type of latte with Kahlua Coffee before that came out delicious and would like to share their recipe?

Personally, I find infused coffee beans to be pathetically inferior. Flavored coffee is always best made by purchasing great coffee beans and flavoring it with a syrup after brewing.

The Kopi Luwak coffee beans are the rarest and most expensive in the world. They are pooped out by Civets. The digestive juices of the faux feline cause the bean to ferment slightly giving the bean a nutty flavor that leads to even more nuttiness

I can’t afford a quality coffee grinder. Should I still grind at home?

Question by dot product: I can’t afford a quality coffee grinder. Should I still grind at home?
I’ve heard that the grinder is really important, but so is grinding just before brewing. Should I settle for a mediocre grinder and grind my coffee at home, or have it done at the store for the week?
I use a French press to make my coffee – perhaps this makes a difference. Thank you!

There are two kinds of grinders you can use for coffee, a burr mill and the kind with rotating steel blades. While the burr mills can run up to $ 500.00, the later is only around $ 19.00 at Amazon. I have a Krups coffee grinder with stainless steel blades and that’s what I paid for it. I’ve had it for about 15 years and it still works like a charm.

Best coffee to buy at the grocery store?

I just got a coffee maker for Christmas and I am pretty excited. I have usually either just drank tea or when I did drink coffee, I drank instant coffee. What is the best stuff to buy? I bought a bag of Starbucks vanilla flavored coffee, is Starbucks the best to buy at the grocery store or is there a better? I heard Dunkin Donuts coffee is only good at Dunkin Donuts and that its not as good when you brew it yourself at home, any thoughts would be much appreciated. Thanks.

I like a darker roast. Ethiopian beans are the best in my opinion which I usually get at what we call “Kensington Market” in Toronto. In my opinion, it is best to try to enjoy the ground bean without the added flavour. Not everyone is a coffee drinker though, and it may take time to acquire the taste to be able to drink coffee sans extra sugary flavorings. I like buying the beans whole and grinding them at home so they stay fresher. It really makes a difference. I don’t roast my own though, although, some people do for that extra extra freshness. I would go for the loose beans in your grocery store. I go for the “bold” If you are a tea drinker though, you may want to start with the light or medium until you become accustomed to the more bold flavour.

Take advantage of samplings so you can see what your taste is. It doesn’t hurt to ask for a sample either.

How can I get the best home brewed coffee?

I drink a lot of coffee but want better quality coffee. I work the night shift and survive off it. Any and all advice pertaining to home brewed coffee is welcome.

First of all buy some coffee! What I mean is something that is made in smaller batches and preferably from somewhere close to you that roasts their own beans. Next, if you use it relatively quickly grind it at the store from whole beans or, if you don’t use it quickly bring home whole beans and grind yourself. Finally find a brewing method you like the most. For a very strong cup get a French press but keep in mind that it will be messy. Otherwise get a drip coffee maker that lets you adjust the brewing strength and play with it until you get it to where you like it.

I am highly sensitive to caffeine in coffee. If I have two cups in the morning, I’m shaking like a leaf.If I have a Starbucks after noon, I will have a lousy night’s sleep.

However, in Hawaii, I had two cups of 100% Kona (at $ 25/pound) and no problems whatsoever. No hand shakiness, no weird feeling. Is there a difference with higher quality coffees in the affect of the caffeine?

Maybe you got decaffeinated by mistake when you were in Hawaii? You should opt for decaffeinated coffee. That would make you feel better during the day.

My best friend is pregnant, and she refuses to stop drinking caffeinated coffee?

My best friend is about five months along, and she is absolutely refusing to stop drinking coffee! She won’t switch to decaf because she “hates the taste and doesn’t get the same rush from caffeine in regular coffee.” She seriously drinks it with every meal, and the other day at lunch she drank espresso! Her husband has tried stopping her by getting rid of all the coffee in the house, but she just goes out and gets it. And obviously he can’t go with her everywhere she goes. She said she doesn’t care because coffee is her favorite thing and without it she feels lost. She just doesn’t care what it might do to the baby. She loves coffee too much. What should I do?! I’m seriously scared. She won’t even listen to doctors!
Also, could someone please tell me what harm this could do to her unborn baby if it continues?

Well, researchers said that caffeine showed a link to a higher risk of miscarriage but, not all studies showed the same thing. Below are some excerpts from experts though, mind you I am pregnant and I still drink some caffeine and while I was pregnant with #2 I drank soda. Although, I limited it to once a day or every other day.. no more than 150 mg per day i.e. “Coke 12 oz. = 35 mg caffeine or (20 oz. = 58mg caffeine)” so that means I can drink at least 2 if I’d like.

“There’s general agreement that pregnant women and those trying to conceive should avoid consuming large quantities of caffeine. But after decades of controversy and conflicting evidence, there’s still no real consensus on how much caffeine is safe during pregnancy.”

Are there other possible risks besides miscarriage?

A study in Denmark found that the risk of stillbirth more than doubled in women who drank a great deal of coffee per day — eight cups or more — compared with non-coffee drinkers. And some studies suggest that high levels of caffeine consumption by Mom may slightly reduce a baby’s birth weight, but other research has shown no association.

One study found a link between maternal caffeine consumption equal to three cups of coffee per day and an increased risk of having a son born with undescended testes. This happens when the testes don’t move from the pelvis into the scrotum as they usually do in late pregnancy.

Other research has shown that babies whose mothers consumed more than 500 mg of caffeine a day had faster heart rates and breathing rates and spent more time awake in the first few days after birth.”

I love drinking gourmet coffee especially when it has cinnamon in it. I was wondering how to do it myself at home though?

If you are making coffee in a press, then the secret is to make sure the water is not boiling hot. If the water is too hot then it turns the coffee bitter. Put a dash of cinnamon into the coffee grinds and mix. Always use whole beans (stored in an airtight container and well sealed for freshness) and grind as required.

You can do the same with a coffee machine but if you find the coffee is always slightly bitter then add a small dash of salt to the grinds instead of cinnamon(in the filter with your grinds) and sprinkle cinnamon on top of your coffee after you pour it. Also, put the cream into your coffee cup before you pour the coffee not after.
